Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
Peach Filling
  • 4 cups fresh peaches peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
Topping
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter melted
  • 1/4 teaspoon salt

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Stir in the vanilla extract.
  2. Gradually add the flour and salt, mixing until just combined. Press the mixture into the bottom of a greased 9x13 inch baking pan.
Make the Peach Filling
  1. In a separate bowl, combine the sliced peaches, sugar, lemon juice, cornstarch, and cinnamon. Toss until the peaches are well coated.
  2. Spread the peach filling evenly over the crust in the baking pan.
Prepare the Topping
  1. In a bowl, mix together the oats, brown sugar, flour, melted butter, and salt until crumbly. Sprinkle the topping evenly over the peach filling.
Bake the Bars
  1. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  2. Allow to cool completely before slicing into bars.
