Ingredients
  

Salad Base
  • 2 cups mixed greens such as spinach, arugula, and kale
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 avocado sliced
Protein
  • 2 cups grilled chicken breast sliced
Green Goddess Dressing
  • 1/2 cup Greek yogurt plain
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh chives chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Remove from the grill and let it rest for 5 minutes before slicing.
Make the Dressing
  1. In a mixing bowl, combine Greek yogurt, parsley, chives, lemon juice, garlic, salt, and pepper.
  2. Whisk until smooth and well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
  2. Add the sliced grilled chicken on top.
  3. Drizzle the green goddess dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!
