Ingredients
  

Meatballs
  • 1 lb ground beef or lamb
  • 1 cup bread crumbs preferably panko
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cucumber grated excess water squeezed out
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 1/2 tsp salt
Lemon Rice
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1/2 tsp salt
Cucumber Salad
  • 1 large cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion sliced
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground beef, bread crumbs, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Bake in the preheated oven for 20-25 minutes or until cooked through.
Make Tzatziki Sauce
  1. In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt. Mix well and refrigerate until ready to use.
Cook Lemon Rice
  1. In a pot, melt butter over medium heat. Add rice and toast for 2-3 minutes.
  2. Add chicken broth, lemon juice, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender.
Prepare Cucumber Salad
  1. In a bowl, combine sliced cucumber, cherry tomatoes, red onion, olive oil, red wine vinegar, salt, and pepper. Toss to combine and set aside.
Assemble Gyro Bowls
  1. In serving bowls, layer lemon rice, meatballs, tzatziki sauce, and cucumber salad. Serve immediately.
