Ingredients
  

Casserole Base
  • 1 lb ground turkey lean
  • 2 medium sweet potatoes peeled and diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 cup chicken broth low sodium
Topping
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup bread crumbs optional for crunch

Method
 

Prepare the Ingredients
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add ground turkey and cook until browned, about 5-7 minutes.
  3. Add chopped onion, garlic, and bell pepper to the skillet and sauté until softened, about 5 minutes.
  4. Stir in diced sweet potatoes, salt, pepper, paprika, cumin, and chicken broth. Cook until sweet potatoes are tender, about 10-15 minutes.
Assemble the Casserole
  1. Transfer the turkey and sweet potato mixture to a baking dish.
  2. Sprinkle shredded cheese and bread crumbs evenly over the top.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool for a few minutes before serving.
