Ingredients
  

Pizza Dough
  • 1 lb pizza dough store-bought or homemade
Roasted Garlic
  • 1 head garlic roasted
Spinach Topping
  • 4 cups fresh spinach washed and chopped
  • 2 tbsp olive oil for sautéing
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Cheese Topping
  • 1 cup ricotta cheese for base spread
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
Herbs
  • 1 tsp dried oregano for flavor
  • 1 tsp dried thyme for flavor

Method
 

Prepare the Roasted Garlic
  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
Sauté the Spinach
  1. In a skillet, heat olive oil over medium heat. Add the chopped spinach, salt, and pepper. Sauté until wilted, about 3-4 minutes.
Prepare the Pizza Base
  1. Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a baking sheet.
Assemble the Pizza
  1. Spread the ricotta cheese evenly over the pizza base. Squeeze the roasted garlic cloves out of their skins and spread them over the ricotta. Top with sautéed spinach, crumbled feta, and shredded mozzarella. Sprinkle with oregano and thyme.
Bake the Pizza
  1. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbly.
Serve
  1. Remove from the oven, let cool for a few minutes, slice, and serve warm.
