Greek Lemon Rice

Ingredients
  

Rice and Seasoning
  • 1 cup long-grain rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 2 tablespoons olive oil
  • 1 medium lemon juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Rice
  1. In a medium saucepan, heat the olive oil over medium heat. Add the rinsed rice and sauté for about 2 minutes until lightly toasted.
  2. Pour in the vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
Fluff and Serve
  1. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  2. Fluff the rice with a fork and stir in the chopped parsley.
  3. Serve warm as a side dish to your favorite Mediterranean meal.

Notes
