Prepare the Chicken Skewers
- In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken cubes and marinate for at least 15 minutes.
- Thread the marinated chicken onto skewers.
Cook the Chicken Skewers
- Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through.
Prepare the Lemon Rice
- In a pot, melt butter over medium heat. Add rice and toast for 2 minutes.
- Add chicken broth, lemon zest, lemon juice, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until rice is tender.
Serve
- Serve the chicken skewers over the lemon rice, garnished with additional lemon zest if desired.
