Ingredients
  

Base Ingredients
  • 2 tablespoons Olive oil Extra virgin for best flavor
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Minced
  • 1 carrot Carrot Finely chopped
  • 1 stalk Celery Finely chopped
Tomato Base
  • 2 cans Crushed tomatoes 400g each
  • 2 tablespoons Tomato paste For added richness
  • 1 teaspoon Sugar To balance acidity
Seasoning
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • Salt to taste Salt
  • 1 teaspoon Black pepper Freshly ground
Finishing Touches
  • 1/4 cup Fresh basil Chopped, for garnish
  • Parmesan cheese to taste Parmesan cheese Grated, for serving

Method
 

Prepare the Base
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
Add the Tomatoes
  1. Pour in the crushed tomatoes and add the tomato paste.
  2. Stir well to combine and bring to a simmer.
  3. Add sugar, oregano, basil, salt, and pepper. Mix well.
Simmer the Sauce
  1. Reduce the heat to low and let the sauce simmer for 20 minutes, stirring occasionally.
  2. Taste and adjust seasoning if necessary.
Serve
  1. Serve the sauce over cooked spaghetti and garnish with fresh basil and grated Parmesan cheese.
