  • 2 whole nutmeg
  • 15 whole cloves
  • 1 tablespoon whole juniper berries
  • 30 grams dark brown sugar
  • 1 pod vanilla, split or 1 teaspoon vanilla bean paste
  • Gingerbread cookies, to garnish

Method
 

  1. Fill a large saucepan or stock pot with water, leaving several inches of space at the top.
  2. Place the sliced fresh ginger, cinnamon sticks, whole nutmeg, whole cloves, juniper berries, dark brown sugar, and vanilla pod or paste into the pot.
  3. Bring the water to a gentle simmer over low heat.
  4. Let the mixture simmer for as long as desired, topping up with additional water as needed.
