Garlic Shrimp Mofongo

Ingredients
  

For the Mofongo
  • 3 large green plantains peeled and cut into chunks
  • 4 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 teaspoon olive oil for mashing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Garlic Shrimp
  • 1 pound shrimp peeled and deveined
  • 4 cloves garlic minced
  • 2 tablespoons butter or olive oil
  • 1 teaspoon paprika for seasoning
  • 1 teaspoon cayenne pepper optional, for heat
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Mofongo
  1. In a pot, bring chicken broth to a boil. Add the plantain chunks and cook until tender, about 15 minutes.
  2. Drain the plantains and transfer to a mixing bowl. Add minced garlic, olive oil, salt, and pepper.
  3. Mash the mixture using a mortar and pestle or a food processor until smooth but slightly chunky.
  4. Shape the mofongo into balls or serve in a bowl.
Cook the Garlic Shrimp
  1. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the shrimp, paprika, and cayenne pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
  3. Remove from heat and sprinkle with fresh parsley.
Serve
  1. Plate the mofongo and top with the garlic shrimp. Serve immediately.

Notes

For a vegetarian version, substitute shrimp with sautéed mushrooms or vegetables.
