Prepare the Mofongo
- In a pot, bring chicken broth to a boil. Add the plantain chunks and cook until tender, about 15 minutes.
- Drain the plantains and transfer to a mixing bowl. Add minced garlic, olive oil, salt, and pepper.
- Mash the mixture using a mortar and pestle or a food processor until smooth but slightly chunky.
- Shape the mofongo into balls or serve in a bowl.
Cook the Garlic Shrimp
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the shrimp, paprika, and cayenne pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
- Remove from heat and sprinkle with fresh parsley.
Serve
- Plate the mofongo and top with the garlic shrimp. Serve immediately.
