Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Coating
  • 1 cup bread crumbs preferably panko
  • 1/2 cup Parmesan cheese grated
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Binding
  • 2 large eggs beaten
  • 1 tablespoon olive oil

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness using a meat mallet.
Make the Coating
  1. In a mixing bowl, combine the bread crumbs, Parmesan cheese, minced garlic, oregano, salt, and black pepper.
Coat the Chicken
  1. Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture, pressing to adhere.
Bake the Chicken
  1. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  2. Drizzle olive oil over the chicken.
  3. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and golden brown.
Serve
  1. Remove from the oven and let rest for a few minutes before serving.
  2. Serve hot, garnished with additional Parmesan cheese if desired.

Notes
