Ingredients
  

Garlic Butter Chicken Bites
  • 1 lb chicken breast cut into bite-sized pieces
  • 4 cloves garlic minced
  • 4 tbsp butter unsalted
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 1 tbsp parsley chopped, for garnish
Creamy Parmesan Pasta
  • 8 oz fettuccine or pasta of choice
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 tbsp olive oil
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving 1/2 cup of pasta water.
Cook the Chicken
  1. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the chicken pieces to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes.
Make the Sauce
  1. Reduce the heat to low and pour in the heavy cream, stirring to combine with the chicken and garlic.
  2. Add the grated parmesan cheese and stir until melted and creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Combine Pasta and Sauce
  1. Add the cooked fettuccine to the skillet and toss to coat the pasta in the creamy sauce.
  2. Adjust seasoning with additional salt and pepper if needed.
Serve
  1. Plate the creamy parmesan pasta and top with garlic butter chicken bites.
  2. Garnish with chopped parsley before serving.
