  • 2 cups ripe peaches diced
  • 1 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon salt

Method
 

Prepare the Ingredients
  1. Dice the ripe peaches, red bell pepper, and finely chop the red onion and cilantro.
  2. Seed and mince the jalapeño, then set aside.
Mix the Salsa
  1. In a mixing bowl, combine the diced peaches, red bell pepper, red onion, cilantro, and jalapeño.
  2. Add lime juice and salt, then gently mix until well combined.
Serve
  1. Taste and adjust seasoning if necessary. Serve immediately with tortilla chips or as a topping for grilled meats.
