  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, cream the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Shape and Bake
  1. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
  2. Flatten each ball slightly with the bottom of a glass or your hand.
  3. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
