Ingredients
  

Shrimp and Marinade
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil for cooking
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Rice and Toppings
  • 2 cups cooked rice white or brown
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup avocado diced
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the shrimp and toss to coat.
  2. Let the shrimp marinate for 10 minutes.
Cook the Rice
  1. Cook rice according to package instructions. Set aside once done.
Cook the Shrimp
  1. Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque.
Assemble the Bowls
  1. In each bowl, layer cooked rice, black beans, corn, cooked shrimp, cherry tomatoes, and diced avocado.
  2. Garnish with chopped cilantro and serve with lime wedges.

Notes
