Preparation
- Spread out a few sheets of parchment paper on a cookie sheet or your counter to prepare a space for the mix to cool and set.
- Set aside half the M&Ms for decoration. In a large bowl, mix together Rice Chex, Corn Chex, Cheerios, gluten-free pretzels, half the M&Ms, and the salted peanuts.
- In a microwave-safe bowl, melt vanilla almond bark or white chocolate chips in 20-30 second intervals, stirring after each until smooth and lump-free.
- Pour the melted white chocolate over the cereal mixture, quickly stirring to evenly coat everything before the coating hardens.
- Transfer the coated mixture onto the prepared parchment paper. Immediately sprinkle the reserved M&Ms and optional sprinkles over the top. Allow the mixture to cool completely so the coating sets, forming some clusters.
- Once set, enjoy immediately or store in an airtight container at room temperature for up to 1 week.
