Ingredients
  

Vegetables
  • 2 cups carrots diced
  • 1 cup celery diced
  • 1 cup onion chopped
  • 2 cups spinach fresh
  • 1 cup potatoes diced
  • 1 cup green beans trimmed and chopped
Liquids
  • 6 cups vegetable broth low sodium
  • 1 cup water
Seasonings
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder

Method
 

Prepare the Vegetables
  1. Wash and chop all the vegetables into small, uniform pieces.
  2. Set aside the chopped vegetables for later use.
Cook the Soup
  1. In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.
  2. Add the carrots, celery, onion, and potatoes to the pot. Reduce heat to medium and simmer for 15 minutes.
  3. Stir in the green beans and spinach, and add the seasonings. Simmer for an additional 10 minutes.
  4. Taste and adjust seasoning if necessary. Remove from heat.
Serve
  1. Ladle the soup into bowls and serve hot. Enjoy your healthy vegetable soup!
