Method
Prepare the Vegetables
- Wash and chop all the vegetables into small, uniform pieces.
- Set aside the chopped vegetables for later use.
Cook the Soup
- In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.
- Add the carrots, celery, onion, and potatoes to the pot. Reduce heat to medium and simmer for 15 minutes.
- Stir in the green beans and spinach, and add the seasonings. Simmer for an additional 10 minutes.
- Taste and adjust seasoning if necessary. Remove from heat.
Serve
