Crackers and Filling
  • 2 sleeves Ritz Crackers (~60 crackers)
  • 1 cup creamy peanut butter
Chocolate Coating
  • 20 oz. Ghirardelli white chocolate melting wafers
  • 1-2 Tbsp coconut oil (optional)
Toppings
  • 1/4 cup festive holiday sprinkles
  • flaky sea salt for finishing

Method
 

Preparation
  1. Line a cookie sheet with parchment paper. Lay out one sleeve of Ritz crackers with the flat side facing up.
  2. Add approximately 2 teaspoons of creamy peanut butter on each cracker, ensuring a thick, even layer.
  3. Carefully top each peanut butter-coated cracker with another cracker, rounded side up, forming sandwiches with two crackers per cookie.
Chocolate Coating
  1. Place the white chocolate melting wafers in a microwave-safe bowl. Heat for 1 minute, stir, then heat for another minute and stir again until smooth. Optionally, add 1-2 tablespoons of coconut oil.
  2. Using a fork, dunk each sandwich cookie fully into the melted white chocolate, coating thoroughly. Tap off excess chocolate and place the dipped cookie back on the parchment paper.
  3. While the chocolate is still wet, sprinkle festive holiday sprinkles and a pinch of flaky sea salt on top of each cookie.
  4. Allow the chocolate coating to set completely before serving.
