Preparation
- Line a cookie sheet with parchment paper. Lay out one sleeve of Ritz crackers with the flat side facing up.
- Add approximately 2 teaspoons of creamy peanut butter on each cracker, ensuring a thick, even layer.
- Carefully top each peanut butter-coated cracker with another cracker, rounded side up, forming sandwiches with two crackers per cookie.
Chocolate Coating
- Place the white chocolate melting wafers in a microwave-safe bowl. Heat for 1 minute, stir, then heat for another minute and stir again until smooth. Optionally, add 1-2 tablespoons of coconut oil.
- Using a fork, dunk each sandwich cookie fully into the melted white chocolate, coating thoroughly. Tap off excess chocolate and place the dipped cookie back on the parchment paper.
- While the chocolate is still wet, sprinkle festive holiday sprinkles and a pinch of flaky sea salt on top of each cookie.
- Allow the chocolate coating to set completely before serving.
