Ingredients
  

Noodles
  • 8 oz noodles preferably egg noodles or lo mein
Ground Beef Mixture
  • 1 lb ground beef 80/20 for best flavor
  • 1 tbsp vegetable oil for cooking
  • 3 cloves garlic minced
  • 1 inch ginger fresh, minced
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup brown sugar packed
  • 1 tbsp cornstarch to thicken sauce
  • 1 cup beef broth or water
  • 2 scallions green onions sliced for garnish

Method
 

Cook the Noodles
  1. Bring a pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.
Prepare the Beef Mixture
  1. In a large skillet, heat the vegetable oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5 minutes.
  2. Add the minced garlic and ginger to the skillet and sauté for an additional 1-2 minutes until fragrant.
  3. In a bowl, whisk together the soy sauce, brown sugar, cornstarch, and beef broth. Pour this mixture into the skillet.
  4. Stir well and let it simmer for about 5 minutes until the sauce thickens.
Combine and Serve
  1. Add the cooked noodles to the skillet and toss to combine with the beef mixture. Cook for an additional 2-3 minutes until heated through.
  2. Serve hot, garnished with sliced green onions.
