Cooking Steps
- Preheat a skillet over medium-high heat.
- Slice the kielbasa sausage and add to the hot skillet. Stir occasionally while frying for about 6 minutes until browned. Remove the kielbasa from the pan and set aside, leaving the fat in the pan.
- Chop the onion and potatoes into bite-sized pieces.
- Add the chopped potatoes to the skillet with the kielbasa grease. Sprinkle with paprika, kosher salt, and oregano. Stir to coat the potatoes evenly. Reduce the heat to medium or medium-low, cover, and cook for about 13 minutes, stirring regularly.
- Add the chopped onions and minced garlic to the skillet with the potatoes. Cover and cook for about 12 minutes, stirring regularly, until the potatoes are softened and the onions are translucent.
- Add the browned kielbasa back into the skillet. Mix well and cook for an additional 4 minutes to heat through.
