- Wash and cube the potatoes. In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Place the seasoned potatoes in an air fryer basket. Cook at 400°F (204°C) for 20-25 minutes, shaking the basket a few times during cooking to ensure even crisping.
- While the potatoes cook, chop the bacon strips. In a large skillet over medium-high heat, cook the bacon until crisp. Remove the bacon pieces from the skillet and leave about 2 tablespoons of bacon grease in the pan.
- Add the cubed chicken to the skillet with bacon grease. Season with salt, pepper, paprika, and ranch seasoning. Cook until the chicken is fully cooked through, then remove the skillet from heat.
- Add the air-fried potatoes to the skillet with the chicken. Stir well to combine all ingredients. Sprinkle shredded mozzarella cheese evenly over the top, then add the cooked bacon.
- Place the skillet under the oven broiler for a few minutes until the cheese melts and is slightly bubbly. Alternatively, cover the skillet with a lid and let it sit on the stove over low heat to melt the cheese.
- Plate the skillet mixture and drizzle each serving with ranch dressing.
