Ingredients
  

Udon Noodles
  • 12 oz udon noodles fresh or frozen
Curry Sauce
  • 2 tbsp curry powder adjust to taste
  • 1 cup coconut milk canned
  • 1 tbsp soy sauce low sodium preferred
  • 1 tbsp vegetable oil for cooking
Vegetables
  • 1 cup mixed vegetables frozen or fresh (e.g., bell peppers, carrots, peas)
  • 2 cloves garlic minced
  • 1 inch ginger grated
Garnish
  • 2 tbsp green onions sliced, for garnish
  • 1 tbsp sesame seeds optional, for garnish

Method
 

Prepare the Udon Noodles
  1. Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.
Make the Curry Sauce
  1. In the same pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Stir in the curry powder and cook for another 30 seconds.
  3. Pour in the coconut milk and soy sauce, stirring to combine. Bring the mixture to a simmer.
Combine and Serve
  1. Add the mixed vegetables to the curry sauce and cook for 3-4 minutes until heated through.
  2. Add the cooked udon noodles to the pot, tossing to coat them in the sauce. Cook for an additional 1-2 minutes.
  3. Serve hot, garnished with sliced green onions and sesame seeds if desired.
