Prepare the Udon Noodles
- Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

- In the same pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Stir in the curry powder and cook for another 30 seconds.
- Pour in the coconut milk and soy sauce, stirring to combine. Bring the mixture to a simmer.
Combine and Serve
- Add the mixed vegetables to the curry sauce and cook for 3-4 minutes until heated through.
- Add the cooked udon noodles to the pot, tossing to coat them in the sauce. Cook for an additional 1-2 minutes.
- Serve hot, garnished with sliced green onions and sesame seeds if desired.
