- Preheat your oven to 350°F.
- Using a fork, prick each sweet potato several times on all sides. Lightly coat each with canola oil and sprinkle with salt.
- Place potatoes on a baking sheet and bake for 60 to 90 minutes, until fork-tender.
- Once baked, slice each sweet potato in half lengthwise and scoop the center flesh into a mixing bowl.
- Add cooked bacon, unsalted butter, and shredded cheese to the bowl, and mix gently until creamy.
- Spoon the mixture back into the sweet potato skins, creating a well for the egg.
- Crack one egg into each well and season with salt and black pepper.
- Return filled potatoes to the oven and bake for 15 to 20 minutes, or until eggs are set.
- Remove from oven and garnish with minced scallions. Serve warm.
