  • 3 large sweet potatoes for baking
  • 0.5 cup bacon cooked and crumbled
  • 2 tablespoons unsalted butter
  • 0.25 cup shredded white cheddar cheese
  • 6 large eggs
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 scallion minced (for topping)

Method
 

  1. Preheat your oven to 350°F.
  2. Using a fork, prick each sweet potato several times on all sides. Lightly coat each with canola oil and sprinkle with salt.
  3. Place potatoes on a baking sheet and bake for 60 to 90 minutes, until fork-tender.
  4. Once baked, slice each sweet potato in half lengthwise and scoop the center flesh into a mixing bowl.
  5. Add cooked bacon, unsalted butter, and shredded cheese to the bowl, and mix gently until creamy.
  6. Spoon the mixture back into the sweet potato skins, creating a well for the egg.
  7. Crack one egg into each well and season with salt and black pepper.
  8. Return filled potatoes to the oven and bake for 15 to 20 minutes, or until eggs are set.
  9. Remove from oven and garnish with minced scallions. Serve warm.
