  • 3 each allspice berries

  • 1 inch grated fresh ginger
  • ½ cup freshly squeezed orange juice or lemon juice optional
  • 3 tablespoons agave syrup, honey, or sugar adjust to taste

Method
 

Preparation Steps
  1. Wash the fresh or frozen cranberries thoroughly. Zest the orange or lemon.
  2. In a medium-sized pot, combine the cranberries, the citrus zest, and cold water. Tie the chosen spices in a small cheesecloth pouch, or add the loose spices directly to the pot.
  3. Place the pot on the stove and bring the contents gently to a boil. Remove from heat after about one minute.
  4. Allow the cranberry mixture to cool for 30 minutes to one hour to let the flavors infuse.
  5. Remove the cheesecloth pouch or strain the loose spices and cranberries into a clean one-liter jar. Press the berries and fruit gently with a wooden spoon to extract as much juice as possible.
  6. Add the optional freshly squeezed orange or lemon juice if desired. Sweeten the juice with agave syrup, honey, or sugar to taste. Stir well.
  7. For best flavor, let the juice stand for several hours or overnight in the refrigerator.
  8. Serve chilled, at room temperature, or warmed gently in the microwave.
