Preparation
- Line a cookie sheet with parchment paper. Lay out one sleeve of Ritz crackers with the flat side facing up.
- Add approximately 2 teaspoons of creamy peanut butter on each cracker.
- Top each peanut butter-coated cracker with another cracker, rounded side up, forming sandwiches.
Chocolate Coating
- Heat the white chocolate melting wafers in a microwave-safe bowl for 1 minute, stir, then heat for another minute and stir until smooth. Optionally, add 1-2 tablespoons of coconut oil.
- Dunk each sandwich cookie into the melted white chocolate, coating thoroughly. Tap off excess chocolate and place the cookies back on the parchment paper. Drizzle remaining melted chocolate over the cookies for decoration.
- While the chocolate is still wet, sprinkle festive holiday sprinkles and flaky sea salt on top of each cookie.
- Allow the chocolate coating to set completely before serving.
