  • 1 cup sugar

  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 2 cups sweetened shredded coconut divided
  • 1/2 cup chopped walnuts
  • 1 jar raspberry preserves (12 ounces)
  • 1 cup white baking chips

Baking Instructions
  1. Set your oven to 350°F (175°C).
  2. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 5-7 minutes.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add this to the wet ingredients, beating continuously.
  5. Stir in 1 1/4 cups of shredded coconut and the chopped walnuts until evenly distributed.
  6. Press about three-quarters of the dough evenly into the bottom of a greased 13x9-inch baking pan.
  7. Evenly spread the raspberry preserves over the dough layer.
  8. Sprinkle white baking chips and the remaining 3/4 cup of shredded coconut evenly over the raspberry layer.
  9. Crumble the remaining dough over the top and press lightly to adhere.
  10. Bake for 30-35 minutes, or until the top is golden brown and set.
  11. Allow the bars to cool completely in the pan on a wire rack before cutting into approximately 24 bars.
