  • 2 small-medium boiled beets chopped into small cubes

  • 1/4 cup lemon juice
  • 1 tbsp honey
  • 1 tsp lemon zest
Olives & Nuts
  • 1/2 cup pitted green olives finely chopped
Herbs & Seasonings
  • 1/2 cup parsley finely minced
  • 1/2 cup mint finely minced
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 3 tbsp olive oil

Preparation
  1. In a large serving bowl, combine the sliced red onion, chopped green olives, lemon juice, olive oil, honey, lemon zest, kosher salt, and black pepper. Toss thoroughly and let sit for 30-45 minutes.
  2. Chop boiled beets into small cubes and add them to the bowl along with parsley and mint. Gently toss to combine all ingredients.
  3. Let the salad sit for another 15 minutes before serving. This can be enjoyed warm or chilled.
