- Preheat a skillet over medium-high heat.
- Slice the kielbasa sausage and add to the hot skillet. Fry for about 6 minutes, until browned. Remove the kielbasa from the pan and set aside, leaving the rendered fat in the pan.
- Chop the onion and potatoes into bite-sized pieces while the kielbasa is browning.
- Add the chopped potatoes to the skillet with the kielbasa grease. Sprinkle with paprika, kosher salt, and oregano. Stir to coat the potatoes evenly in the fat. Reduce heat and cover, cooking for about 13 minutes.
- Add chopped onions and minced garlic to the skillet. Cover and cook for about 12 minutes until potatoes are softened and onions are translucent.
- Add the browned kielbasa back into the skillet. Mix well and cook for an additional 4 minutes.
