Method
- Preheat your oven to 325°F (163°C).
- Arrange the mini phyllo shells on a baking sheet evenly spaced out.
- Place a small dab (about 1/2 teaspoon) of blackberry jam and 1/2 teaspoon honey inside each phyllo shell. Then top each with a 1/2-inch cube of brie cheese.
- Bake the assembled cups in the preheated oven for 6-8 minutes, until the brie has melted and the phyllo shells are very lightly browned and crisp.
- Remove the baking sheet from the oven and top each cup with a fresh blackberry and a few fresh thyme leaves.
- Drizzle additional honey over the top if desired.
- Transfer the cups onto a wire rack and serve immediately while warm and melty.
