- Cut both the red delicious and granny smith apples into matchstick-sized pieces, then place them in a bowl.
- Pour 2 tablespoons of lemon juice over the apple pieces and toss thoroughly to coat.
- Let the apples sit for at least 5 minutes to absorb the lemon juice.
- In a large mixing bowl, add the matchstick carrots, diced yellow onion, and sweetened dried cranberries.
- Once the apples have soaked, add them to the large mixing bowl with the other ingredients.
- Add the vanilla yogurt and mayonnaise to the bowl and mix.
- Add sugar, salt, and pepper into the bowl and stir well.
- Gently fold in the drained canned mandarin segments.
- Cover the bowl and refrigerate the salad for at least three hours.
- Serve the salad cold.
