Ingredients
  

For the Crispy Rice
  • 2 cups cooked sushi rice chilled
  • 2 tablespoons vegetable oil for frying
  • 1/2 teaspoon salt
For the Salmon
  • 4 fillets salmon skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
For Garnish
  • 2 tablespoons scallions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Crispy Rice
  1. In a skillet, heat vegetable oil over medium heat. Add the chilled sushi rice and flatten it into an even layer. Cook until the bottom is golden brown and crispy, about 10-12 minutes.
  2. Carefully flip the rice and cook the other side until crispy, about 5-7 minutes. Season with salt and remove from heat. Transfer to a plate and keep warm.
Cook the Salmon
  1. Season the salmon fillets with salt and black pepper. In the same skillet, add olive oil and heat over medium-high heat.
  2. Add the salmon fillets and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Remove from heat.
Make the Sauce
  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil until well combined.
Assemble the Dish
  1. To serve, place a portion of crispy rice on each plate, top with a salmon fillet, and drizzle with the sauce. Garnish with sliced scallions and toasted sesame seeds.
