Prepare the Blueberry Mixture
- In a small bowl, combine the fresh blueberries with honey, if using, and gently mash them with a fork to create a chunky mixture.
- Set aside the blueberry mixture to allow the flavors to meld.
Assemble the Sandwiches
- Spread cream cheese on one side of each slice of sourdough bread.
- On four slices, layer the sharp cheddar cheese, followed by the blueberry mixture, and then top with another slice of bread, cream cheese side down.
Grill the Sandwiches
- Heat a griddle over medium heat and add 1 tablespoon of butter.
- Once melted, place two sandwiches on the griddle and cook for about 3-4 minutes until golden brown.
- Flip the sandwiches, add another tablespoon of butter, and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
- Repeat with the remaining sandwiches.
Serve
- Remove the sandwiches from the griddle, slice in half, and serve warm.
