Ingredients
  

Bread and Cheese
  • 8 slices sourdough bread or your preferred bread
  • 8 oz sharp cheddar cheese sliced
  • 4 oz cream cheese softened
Blueberries
  • 1 cup fresh blueberries washed and drained
  • 2 tbsp honey optional, for sweetness
Butter
  • 4 tbsp unsalted butter softened for spreading

Method
 

Prepare the Blueberry Mixture
  1. In a small bowl, combine the fresh blueberries with honey, if using, and gently mash them with a fork to create a chunky mixture.
  2. Set aside the blueberry mixture to allow the flavors to meld.
Assemble the Sandwiches
  1. Spread cream cheese on one side of each slice of sourdough bread.
  2. On four slices, layer the sharp cheddar cheese, followed by the blueberry mixture, and then top with another slice of bread, cream cheese side down.
Grill the Sandwiches
  1. Heat a griddle over medium heat and add 1 tablespoon of butter.
  2. Once melted, place two sandwiches on the griddle and cook for about 3-4 minutes until golden brown.
  3. Flip the sandwiches, add another tablespoon of butter, and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
  4. Repeat with the remaining sandwiches.
Serve
  1. Remove the sandwiches from the griddle, slice in half, and serve warm.
