Ingredients
  

  • 2 pounds chicken drumsticks cleaned, with excess fat removed
  • 2 tablespoons olive oil
  • 2 tablespoons poultry seasoning or seasoning of choice
  • 0.5 teaspoon salt plus more if desired
  • 0.5 teaspoon black pepper plus more if desired
  • 2 teaspoons baking powder

Method
 

  1. Place a cooling rack over a large baking sheet and layer it with paper towels. Arrange the chicken drumsticks on top and tent with more paper towels. Transfer to the refrigerator for at least 2 hours or ideally overnight. If short on time, pat try to dry the chicken legs with paper towels.
  2. Preheat your oven to 400 ℉ (204 ℃). Discard the paper towels from the cooling rack and lightly spray with non-stick cooking spray.
  3. In a large mixing bowl, combine olive oil, poultry seasoning, salt, black pepper, and baking powder. Add the chicken legs and mix gently to coat each piece evenly.
  4. Arrange the seasoned chicken legs spaced apart on the rack. Bake for 35 to 40 minutes, or until an instant-read thermometer in the thickest part of the drumstick reads 165 ℉ (74 ℃).
  5. Remove chicken legs from the oven and let rest on the rack for 5 minutes before serving.
