Method
- Place a cooling rack over a large baking sheet and layer it with paper towels. Arrange the chicken drumsticks on top and tent with more paper towels. Transfer to the refrigerator for at least 2 hours or ideally overnight. If short on time, pat try to dry the chicken legs with paper towels.
- Preheat your oven to 400 ℉ (204 ℃). Discard the paper towels from the cooling rack and lightly spray with non-stick cooking spray.
- In a large mixing bowl, combine olive oil, poultry seasoning, salt, black pepper, and baking powder. Add the chicken legs and mix gently to coat each piece evenly.
- Arrange the seasoned chicken legs spaced apart on the rack. Bake for 35 to 40 minutes, or until an instant-read thermometer in the thickest part of the drumstick reads 165 ℉ (74 ℃).
- Remove chicken legs from the oven and let rest on the rack for 5 minutes before serving.
