Method
Cook the Chicken
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove chicken from the pot and set aside.
Sauté the Vegetables
- In the same pot, add onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
Add Broth and Seasoning
- Pour in the chicken broth and water. Add thyme, salt, and pepper. Bring to a boil.
Cook Gnocchi
- Once boiling, add gnocchi and cook according to package instructions, usually about 2-3 minutes.
Finish the Soup
- Reduce heat to low, return the chicken to the pot, and stir in heavy cream, lemon zest, and lemon juice. Cook for an additional 2-3 minutes until heated through.
- Adjust seasoning if necessary and serve hot.
