Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts diced
  • 4 cups chicken broth low sodium preferred
  • 1 cup water
Vegetables
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
Gnocchi and Cream
  • 1 lb gnocchi store-bought or homemade
  • 1 cup heavy cream
  • 1 lemon zest
  • 2 tbsp lemon juice freshly squeezed
Seasoning
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp olive oil

Method
 

Cook the Chicken
  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Remove chicken from the pot and set aside.
Sauté the Vegetables
  1. In the same pot, add onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
Add Broth and Seasoning
  1. Pour in the chicken broth and water. Add thyme, salt, and pepper. Bring to a boil.
Cook Gnocchi
  1. Once boiling, add gnocchi and cook according to package instructions, usually about 2-3 minutes.
Finish the Soup
  1. Reduce heat to low, return the chicken to the pot, and stir in heavy cream, lemon zest, and lemon juice. Cook for an additional 2-3 minutes until heated through.
  2. Adjust seasoning if necessary and serve hot.

Notes
