Ingredients
  

Chicken and Orzo
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup spinach fresh, chopped
  • 1 cup parmesan cheese grated
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cook Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and onion powder. Cook until browned and cooked through, about 7-8 minutes.
  2. Remove the chicken from the skillet and set aside.
Prepare Orzo
  1. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  2. Add the orzo and chicken broth, bringing to a boil. Reduce heat to a simmer and cook for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Combine Ingredients
  1. Stir in the heavy cream, spinach, and parmesan cheese. Return the cooked chicken to the skillet and mix well. Cook for an additional 2-3 minutes until heated through and creamy.
  2. Adjust seasoning with salt and pepper if needed.
Serve
  1. Serve hot, garnished with extra parmesan cheese if desired.
