Ingredients
  

Beef and Vegetables
  • 1 lb ground beef 85% lean
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup green beans trimmed and cut
Sauce
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup beef broth low sodium
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Topping
  • 1 cup shredded cheddar cheese for topping
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Prepare the Beef
  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
Combine Ingredients
  1. Stir in the diced potatoes, sliced carrots, and green beans.
  2. In a separate bowl, mix together the cream of mushroom soup, beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the beef and vegetables in the skillet.
Bake the Casserole
  1. Transfer the mixture to a baking dish and cover with aluminum foil.
  2. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  3. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Serve
