Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or linguine) Choose your preferred type of pasta.
Sauce
  • 8 oz Feta Cheese Crumbled.
  • 1/2 cup Heavy Cream For creaminess.
  • 1 large Lemon Juice and zest.
  • 2 cloves Garlic Minced.
  • 1/4 cup Olive Oil Extra virgin preferred.
  • 1/2 tsp Salt To taste.
  • 1/4 tsp Black Pepper Freshly ground.
Garnish
  • 2 tbsp Fresh Parsley Chopped.
  • 1 tbsp Lemon Zest For topping.

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving about 1 cup of pasta water.
Prepare Sauce
  1. In a mixing bowl, combine crumbled feta cheese, heavy cream, lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper.
  2. Whisk together until smooth and creamy.
Combine
  1. In a skillet over medium heat, add the cooked pasta and the sauce mixture. Toss to combine, adding reserved pasta water a little at a time until desired creaminess is reached.
  2. Cook for an additional 2-3 minutes until heated through.
Serve
  1. Serve immediately, garnished with chopped parsley and additional lemon zest.

Notes
