Ingredients
  

Meatballs
  • 1 pound ground beef or ground turkey
  • 1/4 cup bread crumbs preferably Italian seasoned
  • 1 large egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth or vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 cup heavy cream
  • 1 cup spinach fresh, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
Cook Meatballs
  1. In a large pot, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
Make Soup
  1. In the same pot, add diced onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
  2. Pour in chicken broth and diced tomatoes. Bring to a simmer.
  3. Return meatballs to the pot and simmer for 10 minutes.
  4. Stir in heavy cream, spinach, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes until heated through.
Serve
  1. Ladle the soup into bowls and serve hot, garnished with fresh herbs if desired.

Notes
