Ingredients
  

Tart Crust
  • 1 sheet puff pastry thawed
Filling
  • 200 grams Brie cheese cut into slices
  • 150 grams fresh cranberries
  • 100 grams pancetta diced
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon honey optional for sweetness
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Tart Crust
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and fit it into a tart pan.
  2. Trim the edges and prick the bottom with a fork. Bake for 10 minutes until lightly golden.
Cook the Pancetta
  1. In a skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes. Remove and drain on paper towels.
Assemble the Tart
  1. Layer the brie slices evenly over the baked tart crust.
  2. Sprinkle the cooked pancetta, cranberries, and thyme over the brie.
  3. Drizzle with honey if desired, and season with salt and pepper.
Bake the Tart
  1. Bake the assembled tart in the oven for an additional 20 minutes, or until the cheese is melted and bubbly.
  2. Let it cool for a few minutes before slicing and serving.
