Method
Prepare the Tart Base
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and fit it into a tart pan.
- Trim the excess pastry and prick the bottom with a fork. Place in the refrigerator while preparing the filling.
Cook the Pancetta
- In a skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes.
- Remove from heat and drain on paper towels.
Assemble the Tart
- In a mixing bowl, combine the cranberries, cooked pancetta, thyme, honey, salt, and pepper.
- Spread the cranberry mixture evenly over the puff pastry base.
- Top with slices of brie cheese.
Bake the Tart
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is melted.
- Allow to cool slightly before slicing and serving.
