Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
Filling
  • 8 oz brie cheese cut into slices
  • 1 cup fresh cranberries or frozen, thawed
  • 4 oz pancetta diced
  • 1 tbsp fresh thyme chopped
  • 1 tbsp honey optional for sweetness
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Tart Base
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a tart pan.
  3. Trim the excess pastry and prick the bottom with a fork. Place in the refrigerator while preparing the filling.
Cook the Pancetta
  1. In a skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes.
  2. Remove from heat and drain on paper towels.
Assemble the Tart
  1. In a mixing bowl, combine the cranberries, cooked pancetta, thyme, honey, salt, and pepper.
  2. Spread the cranberry mixture evenly over the puff pastry base.
  3. Top with slices of brie cheese.
Bake the Tart
  1. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is melted.
  2. Allow to cool slightly before slicing and serving.
