Preparation
  1. Add cottage cheese, flour, an egg, baking powder, and a little salt to a mixing bowl.
  2. Mix everything until it forms a soft, slightly sticky dough.

  4. Cut the dough into small, palm-sized pieces.
  5. Flatten each portion into a rough circle.
  6. Warm a skillet over medium heat and brush or drizzle a little olive oil.
  7. Place one piece at a time onto the skillet, cooking for 2–3 minutes per side until it browns and puffs slightly.
  8. Once cooked, stack the flatbreads under a towel to keep them warm and soft.
  9. Serve warm with curries, soups, or as a quick snack.
