Method
Prepare the Oven and Muffin Tin
- Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
- In a mixing bowl, combine the beaten eggs, cottage cheese, spinach, bell pepper, cheddar cheese, salt, and black pepper.
Fill the Muffin Tin
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake the Egg Bites
- Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden on top.
Cool and Serve
- Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
- Serve warm or store in the refrigerator for up to 4 days.
