Ingredients
  

Egg Mixture
  • 6 large eggs beaten
  • 1 cup cottage cheese preferably low-fat
  • 1 cup spinach fresh, chopped
  • 1/2 cup bell pepper diced
  • 1/2 cup cheddar cheese shredded
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, combine the beaten eggs, cottage cheese, spinach, bell pepper, cheddar cheese, salt, and black pepper.
Fill the Muffin Tin
  1. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake the Egg Bites
  1. Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden on top.
Cool and Serve
  1. Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
  2. Serve warm or store in the refrigerator for up to 4 days.
