Ingredients
  

Steak and Marinade
  • 1 lb flank steak or skirt steak
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped
Vegetable Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup cooked rice white or brown
Cilantro Lime Dressing
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey
  • 1/4 cup fresh cilantro chopped
  • 1 clove garlic minced
  • 1 pinch salt

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, salt, black pepper, and chopped cilantro. Mix well.
  2. Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 15 minutes.
Cook the Steak
  1. Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade.
  2. Grill the steak for about 5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for 5 minutes.
Prepare the Dressing
  1. In a small bowl, whisk together Greek yogurt, lime juice, honey, chopped cilantro, minced garlic, and a pinch of salt until smooth.
Assemble the Bowls
  1. Slice the grilled steak against the grain into thin strips.
  2. In bowls, layer cooked rice, black beans, corn, cherry tomatoes, avocado slices, and sliced steak.
  3. Drizzle with cilantro lime dressing and serve immediately.
