Chinese Beef and Broccoli

Ingredients
  

Beef and Marinade
  • 1 pound flank steak thinly sliced against the grain
  • 2 tablespoons soy sauce for marinade
  • 1 tablespoon cornstarch for marinade
  • 1 tablespoon vegetable oil for marinade
  • 1 teaspoon sesame oil for marinade
Vegetables
  • 4 cups broccoli florets fresh
  • 1 cup bell pepper sliced
  • 2 cloves garlic minced
  • 1 inch ginger fresh, minced
Sauce
  • 1 cup beef broth low sodium
  • 3 tablespoons soy sauce for sauce
  • 1 tablespoon oyster sauce optional
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
  • 1 teaspoon sugar to balance flavors

Method
 

Prepare the Marinade
  1. In a bowl, combine sliced flank steak with soy sauce, cornstarch, vegetable oil, and sesame oil. Mix well and let marinate for 15 minutes.
Cook the Beef
  1. Heat a wok over high heat. Add a tablespoon of vegetable oil. Once hot, add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove from the wok and set aside.
Stir-Fry the Vegetables
  1. In the same wok, add a bit more oil if needed. Add garlic and ginger, stir-fry for 30 seconds. Then add broccoli and bell pepper, stir-fry for about 4-5 minutes until tender-crisp.
Combine and Finish
  1. Return the beef to the wok. Add beef broth, soy sauce, oyster sauce, sugar, and the cornstarch slurry. Stir well and cook for another 2-3 minutes until the sauce thickens.
Serve
  1. Serve hot over steamed rice or noodles.

Notes

For a spicier version, add red pepper flakes or sliced chili peppers during the stir-fry.
