Ingredients
  

Pasta and Chicken
  • 8 oz rotini pasta or any pasta of choice
  • 2 cups cooked chicken shredded or diced
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup Parmesan cheese grated
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp black pepper to taste
Toppings
  • 1/4 cup croutons optional
  • 2 tbsp additional Parmesan cheese for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and rinse under cold water to cool.
Prepare the Salad
  1. In a large mixing bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, and chopped romaine lettuce.
  2. In a separate bowl, whisk together the Caesar dressing, grated Parmesan cheese, lemon juice, and black pepper.
  3. Pour the dressing over the pasta salad and toss to combine until everything is evenly coated.
Serve
  1. Top with croutons and additional Parmesan cheese if desired. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes
