Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente.
- Drain the pasta in a colander and rinse under cold water to cool.
Prepare the Salad
- In a large mixing bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, and chopped romaine lettuce.
- In a separate bowl, whisk together the Caesar dressing, grated Parmesan cheese, lemon juice, and black pepper.
- Pour the dressing over the pasta salad and toss to combine until everything is evenly coated.
Serve
- Top with croutons and additional Parmesan cheese if desired. Serve immediately or chill in the refrigerator for 30 minutes before serving.
