Ingredients
  

Meatloaf Base
  • 1 lb ground beef 80/20 blend for best flavor
  • 1 cup bread crumbs seasoned or plain
  • 1 large egg beaten
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
Casserole Toppings
  • 2 cups shredded cheddar cheese or your favorite cheese
  • 1 cup cooked bacon crumbled
  • 1 cup sour cream
  • 1 cup green onions sliced

Method
 

Prepare the Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, bread crumbs, egg, onion, garlic, Worcestershire sauce, salt, and pepper.
  3. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in a greased casserole dish.
Bake the Meatloaf
  1. Bake in the preheated oven for 45 minutes or until the internal temperature reaches 160°F (70°C).
  2. Remove from the oven and top with shredded cheddar cheese and crumbled bacon.
  3. Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let it rest for 10 minutes.
  2. Top with sour cream and sliced green onions before serving.
  3. Slice and serve warm.
