  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups reduced-sodium chicken broth
  • 14 ounce can diced Italian tomatoes
  • 1/2 cup milk
  • 8 ounces uncooked penne or similar pasta
  • 1/2 teaspoon ground black pepper
  • 2 cups shredded Cheddar-Jack cheese

Method
 

  1. Add olive oil to a large skillet and warm over medium heat.
  2. Add the sliced kielbasa and diced onion to the skillet and cook for about 4 minutes, stirring regularly.
  3. Stir in the minced garlic and Italian seasoning; cook for 30 seconds.
  4. Pour in the chicken broth, diced tomatoes, milk, uncooked pasta, and ground black pepper. Stir to combine.
  5. Increase heat to bring the mixture to a boil. Once boiling, reduce heat to medium-low, cover, and cook for 15 minutes, stirring occasionally.
  6. Take the skillet off the heat and stir in the shredded cheese until fully melted.
  7. Adjust seasoning with salt and pepper as desired before serving.
