  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups reduced-sodium chicken broth
  • 14 ounce can diced Italian tomatoes
  • ½ cup milk
  • 8 ounces uncooked penne or similar pasta
  • ½ teaspoon ground black pepper
  • 2 cups shredded Cheddar-Jack cheese

Method
 

  1. Add olive oil to a large skillet and warm over medium heat.
  2. Add the sliced kielbasa and diced onion to the skillet and cook for about 4 minutes until lightly browned.
  3. Stir in the minced garlic and Italian seasoning; cook for 30 seconds while stirring constantly.
  4. Pour in the chicken broth, diced tomatoes, milk, pasta, and ground black pepper. Stir to combine.
  5. Bring the mixture to a boil. Once boiling, reduce heat to medium-low, cover, and cook for 15 minutes until the pasta is al dente, stirring occasionally.
  6. Remove from heat and stir in the Cheddar-Jack cheese until fully melted and incorporated.
  7. Adjust seasoning with salt and pepper as desired before serving.
