Method
Cook the Pasta
- Bring a pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.
- In the same pot, add olive oil and heat over medium heat.
Cook the Chicken
- Add diced chicken to the skillet and season with Cajun seasoning and garlic powder. Cook until chicken is browned and cooked through, about 5-7 minutes.
Make the Sauce
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add the cooked rotini and spinach, stirring until spinach wilts and pasta is coated in sauce.
Add Cheese and Serve
- Stir in the shredded cheese until melted and creamy. Adjust seasoning if necessary.
- Serve hot, garnished with parsley and red pepper flakes if desired.
