Ingredients
  

Pasta and Chicken
  • 12 oz rotini pasta uncooked
  • 1 lb chicken breast diced
  • 2 tbsp olive oil for cooking
  • 1 tsp Cajun seasoning adjust to taste
  • 1 tsp garlic powder or 2 cloves fresh garlic, minced
Sauce and Cheese
  • 1 cup heavy cream for creaminess
  • 1 cup shredded cheddar cheese or cheese of choice
  • 1 cup chicken broth low sodium preferred
  • 1 cup spinach fresh or frozen, optional
Garnish
  • 2 tbsp parsley chopped, for garnish
  • 1 tsp red pepper flakes optional, for heat

Method
 

Cook the Pasta
  1. Bring a pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, add olive oil and heat over medium heat.
Cook the Chicken
  1. Add diced chicken to the skillet and season with Cajun seasoning and garlic powder. Cook until chicken is browned and cooked through, about 5-7 minutes.
Make the Sauce
  1. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  2. Add the cooked rotini and spinach, stirring until spinach wilts and pasta is coated in sauce.
Add Cheese and Serve
  1. Stir in the shredded cheese until melted and creamy. Adjust seasoning if necessary.
  2. Serve hot, garnished with parsley and red pepper flakes if desired.

Notes
