Ingredients
  

Filling
  • 1 lb Ground beef 80/20 for best flavor
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 1 cup Diced tomatoes Drained
  • 1/2 cup Pickles Chopped
Quesadilla Assembly
  • 4 large Flour tortillas
  • 2 tbsp Butter For frying

Method
 

Prepare the Beef Filling
  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  2. Add garlic powder, onion powder, and paprika to the beef. Stir to combine and cook for an additional 2 minutes.
Assemble Quesadillas
  1. In a mixing bowl, combine the cooked beef, cheddar cheese, mozzarella cheese, diced tomatoes, and pickles.
  2. Spread the mixture evenly over half of each tortilla, then fold the other half over to create a half-moon shape.
Cook Quesadillas
  1. In the same skillet, melt 1 tablespoon of butter over medium heat. Place 2 quesadillas in the skillet and cook for 3-4 minutes on each side until golden brown and cheese is melted.
  2. Repeat with remaining quesadillas, adding more butter as needed.
Serve
  1. Cut quesadillas into wedges and serve warm with your favorite dipping sauces like ketchup or ranch.
