Method
Prepare the Grits
- In a saucepan, bring water or chicken broth to a boil. Slowly whisk in the grits.
- Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.
- Stir in heavy cream and cheese (if using) until smooth and creamy. Season with salt and pepper to taste.
Cook the Shrimp
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
- Add olive oil to the skillet, then add minced garlic and sauté for about 1 minute.
- Add the shrimp, lemon juice, paprika, cajun seasoning, salt, and pepper. Cook until shrimp are pink and opaque, about 3-5 minutes.
- Stir in the cooked bacon and mix well.
Serve
- Spoon the creamy grits onto plates and top with the shrimp mixture.
- Garnish with chopped green onions and parsley if desired. Serve immediately.
