Ingredients
  

Grits
  • 1 cup grits preferably stone-ground
  • 4 cups water or chicken broth
  • 1 cup heavy cream for creaminess
  • 1 cup shredded cheddar cheese optional
Shrimp
  • 1 lb large shrimp peeled and deveined
  • 4 slices bacon chopped
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp paprika
  • 1 tsp cajun seasoning
Garnish
  • 2 tbsp green onions chopped
  • 1 tbsp parsley chopped, optional

Method
 

Prepare the Grits
  1. In a saucepan, bring water or chicken broth to a boil. Slowly whisk in the grits.
  2. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.
  3. Stir in heavy cream and cheese (if using) until smooth and creamy. Season with salt and pepper to taste.
Cook the Shrimp
  1. In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
  2. Add olive oil to the skillet, then add minced garlic and sauté for about 1 minute.
  3. Add the shrimp, lemon juice, paprika, cajun seasoning, salt, and pepper. Cook until shrimp are pink and opaque, about 3-5 minutes.
  4. Stir in the cooked bacon and mix well.
Serve
  1. Spoon the creamy grits onto plates and top with the shrimp mixture.
  2. Garnish with chopped green onions and parsley if desired. Serve immediately.

Notes

For a spicier version, add more cajun seasoning or a dash of hot sauce.
